    Happy Garden Cafe is such a great name for a “garden” cafe as it adeptly fits the ambiance. Indoor plants everywhere set the stage for a secluded retreat from the surrounding concrete. It’s a spot that mixes the inside and outside well. So if you’re looking to take a break from the urban grind in Makati City, Happy Garden Cafe is the place to be. It serves a variety of excellent food fare with clean and healthy ingredients including gluten-free and vegetarian delights. My sister chose this venue to celebrate her birthday this year. 🙂

    Ambiance:

    Whether for a casual evening or meal with your pals, Happy Garden Cafe supplies well-executed food in an indoor garden-like contemporary, “unhurried” atmosphere. Hanging plants and flowers and lounge chairs with green upholstery line the area and complete the theme. There’s even a part where you can spend a large family gathering or hold a special event. We took advantage of the balloon decors and backdrop setup for a birthday party since we came early for dinner. 😉 At the front, they sell Bizu pastries, bread, and other packaged food.

    We went straight to the mains, not minding the appetizers. 🙂

    Their OMG Pasta (PhP 495 – for sharing, PhP 265 – personal) closely resembles the traditional palabok but with more delectable elements in the mix. It consisted of crab fat, scallops, smoked fish, and angel hair shrimps shell sauce. The flavors were rich without leaving you in a food coma.

    Ox Tongue with Mushroom Sauce (PhP 795) was delicious! Ordering anything with truffle sauce always turns out a good decision for us. The mushroom sauce was taken up a notch with white wine. We loved how the heady aroma even intensified the robust earthy flavors.

    Wagyu Beef Salpicao on Shiitake Black Rice (PhP 495) was one of the highlights of the meal for me. It was composed of Saikoro wagyu “melt-in-your-mouth” beef cubes that demonstrated a really pure tenderloin beef taste.

    Tofu with Black Pepper Sauce (PhP 295) is a vegetarian-friendly and gluten-free dish that treat tofu the way it deserves. It featured an intriguing display of flavors and textures with fresh shiitake mushrooms, mixed greens, tahini, and orange dressing.

    In their Margherita Pizza (PhP 525), the boldness of the tangy tomato stood out most, which we liked a lot. It was nicely complemented by the pomodoro sauce and mozzarella cheese, all punctuated by overarching notes of fragrant basil. The crust had a puffy-edged character that I also enjoyed.

    Price for Value:

    Prices are generally on the expensive side but deliver good and reasonable value. Happy Garden Cafe in Makati dishes out straightforward, satisfying fare in a relaxed setting. This cafe represents the owners’ love for fresh food, even welcoming those with gluten intolerance. It’s doing an admirable job in nurturing the area with a great concept which combines approachable healthy dishes with comfort food favorites (without the guilt!). Check it out.

    Review of Royal Indian Curry House (Poblacion, Makati City)

    We had a triple birthday celebration at Royal Indian Curry House (RICH) in Poblacion near A. Venue Mall and Century City Mall. It’s been a while since we last dined in a restaurant serving Indian cuisine, so I was definitely excited to give it a try. Royal Indian Curry House is known to serve some of the best authentic contemporary classic Indian food and Pakistani cuisine in the metro. As it’s located in a quiet street at noon, you could easily walk past its nondescript exterior. But once you get through that door, things change. RICH is the kind of approachable place where you could learn to appreciate Indian food. Check out their menu here.

    Review of Royal Indian Curry House (Poblacion, Makati City)

    Ambiance:

    Royal Indian Curry House is favored by a clientele of locals and tourists blessed with good taste. The five-story building houses a dining room (where we were at), sports bars, private rooms, and a sky lounge. The dining room is furnished with high-backed dining chairs upholstered in crushed velvet, wood-sculpted swirl patterns on posts and on walls, paintings of Indian women in various settings, tinted pendant lamps by the staircase, and sculptures of subjects reminiscent of India. Lighting is soft and Indian music plays softly in the background.

    Food:

    Royal Indian Curry House nails the Indian food staples. For our starter, RICH’s Samosas (PhP 209) were rich in taste and in aroma. They’re light, fluffy and a good way to kick off your feast. It’s delicious on its own, but even better when dipped in the paired sriracha sauce, tamarind, and mint chutney.

    The Murg Makhani (PhP 449) was incredibly tasty. The buttery chicken was perfectly cooked, and the sauce had a silky smooth rich texture which provided an overarching, luscious creaminess and richness to the whole dish. Perfectly balanced and superb.


    RICH’s Palak Paneer
    (PhP 409) was a brazenly simple, yet profound dish with a vegetal smack providing a key counterweight to the gravity of the dish. It’s all the pureed goodness you need, a satisfying and an easy, pretty healthy, quick option for lunch. We ate it with Plain Basmati (PhP 189) and got some thick and chewy Cheese Naan (PhP 209) to dip it with for that little something extra.

    Their Afghani Chicken (PhP 449) was a delectable version of the chicken curry. It’s also creamy thus pairing it with basmati rice will emphasize its lip-smacking flavors. Nice.

    To wash it all down, Rose Lassi (PhP 219) gave a fragrant, refreshing and cooling taste. It could easily win the race for my next favorite drink. It’s a delicious twist on the traditional lassi; the sweet yogurt was flavored with rose syrup.

    Price for Value:

    Overall, our experience was quite positive, and I can definitely see why the place is so popular. Prices aren’t too steep for the value, and their signatures are really worth trying. Royal Indian Curry House in Makati is a nice place to get tasty, dependable preparations of classic North Indian fare; I would have no qualms about coming back. There’s no modesty in the name, but perhaps there doesn’t need to be. Royal and rich flavors and aroma of dishes are to be expected, and with their elaborate spices and good ingredients coming into play, this restaurant is great at what it does.

    We have visited Glorietta countless of times, but it was my first time to come across Holiday Inn & Suites Makati. I was actually surprised to learn that it’s conveniently located in the Glorietta Shopping Complex and has a direct connection to the mall. It was my sister’s 25 birthday last Sunday and we celebrated the occasion having lunch at Flavors Restaurant that’s housed at the hotel’s lobby level.

    Review of Flavors Restaurant (Holiday Inn and Suites Makati)

    Ambiance:

    The restaurant design looks posh and sleek, much like what’s expected of it as one housed in a hotel in Makati. The ambiance felt cozy and merry, with Nutcracker Christmas-themed decors throughout the space. It’s a good way to make guests feel the mood of the festive holiday season, the kind that people wouldn’t want to walk past without wishing they were inside. Indulge in a feast for all your sense at Flavors. It’s a casual dining experience with a fine dining sensibility.

    Service:

    Flavors Restaurant may be formal and elegant, but the service did not seem overly stuffy. You can expect to have a refined and proper experience without feeling uncomfortable like you can’t sit back and relax. The waitstaff were courteous and helpful, rated 5-star for a 5-star Makati hotel. They also sang a happy birthday song for my sister! 🙂

    Food:

    We were wowed with an extensive spread of the premium classics (including lechon, roast beef, crabs, shrimps, and mussels), food stations artfully presented with hearty selections of meat, seafood and vegetables, and separate dessert tables for make-your-own halo-halo, chocolate fountain, cakes, bread and pastries, and fruits.

    While there’s no particular dish that blew us away, there were certain ones that are on the borderline of great. International and local favorites and vegetarian options are available. Succinct to say, Flavors is a safe bet when you’re looking for a buffet restaurant delivering quality all-you-can-eat food with a variety of delightful choices. Feel free to get messy here – it’s the best way to enjoy the food.

    Price for Value:

    Makati is flush with expensive and highly rated dining spots, and Flavors Restaurant at Holiday Inn & Suites is no different. It hits the spot for any special occasion or family event. Rates are pretty fancy (P1900++/head) but definitely worth it. Especially in this holiday season, it’s the perfect time of the year to impress your loved ones with your refined palate and exquisite choice. We availed of BDO’s promo and got 50% off the bill!     Pink Panda is housed on the ground floor of Y2 Residence Hotel across A. Venue Mall. On the surface, it would be easy to assume that it’s just another under-the-radar casual spot in Makati. But one step in and you’ll realize it’s far from that. It’s a dimly-lit restaurant where you can take delight in Southeast Asian food flavors and get a quick alcohol fix. Featuring Thai, Vietnamese, Indonesian, Chinese, and Filipino comfort food, Pink Panda updates its menu every six months, retaining those that received warm accolade from customers and replacing those that didn’t. Aside from serving a la carte dishes for lunch and dinner, it also caters to breakfast of hotel guests daily buffet-style.

    Review of Pink Panda Southeast Asian Diner (Poblacion, Makati City)

    Ambiance:

    Pink Panda in Makati opened in 2014 and it’s owned by Erwan Heusaff and his friends. It is a nice change of pace if you’re ever in need of a quieter meal in Makati, perfect for a date night, dinner with the family, or a cool hangout session with friends. Its interior design and theme exude a genteel charm. The modern space looks artsy and colorful, filled with Asian decors and influences. The bicycle on the wall and the ceiling panels are sleek accents that are most striking and unexpected. While the lighting and overall ambiance seemingly attract a grown-up crowd, this restaurant doesn’t feel stuffy in the slightest.

    Food:

    We started dinner with the Prawn Toasties (PhP 220) and were completely smitten with the taste and texture. I’m seriously craving for it while typing right now! Presented as small triangles of bread with sesame seeds and sweet chili sauce on the side, these toasts were savory. They were fried to a light bronze and had a mild, unobtrusive flavor.

    Pink Panda’s Chicken and Dumpling Noodle (PhP 240) is awesome stuff that reminded me of childhood. It’s a chicken-rich and particularly hearty soup that consisted of roasted chicken, spinach dumpling, garlic chips, and egg noodles cooked in lemongrass ginger broth that’s aromatic. The soup had a good amount of salt, and the noodles had a good bite to it. The dumplings were flavorful and stuffed full, folded into little round parcels. Yum!

    Who eats at Pink Panda without getting their signature Pink Panda Pork Bun (PhP 190)? Made with Chinese sausage, wood ear mushroom, and salted egg, these “siopao” pork buns are must-orders. They’re huge and tasty, especially with the sweet sauce. I liked that the pork did not have too much fat. We appreciated more of the meatiness in the fluffy steamed bun.

    Dimsum and then Some (PhP 330) is a must-order when you want to relish a quality yum cha meal. Three different types of shrimp dumplings (more like “hakaw”) were served hot on the table: chili, pumpkin, and kinchay. Honestly I couldn’t choose which one was the best. All were great and really satisfying, with or without the accompaniment of chili soy sauce.

    Crispy Beef Rendang (PhP 220) was the star of the night. It’s one of the best-selling dishes at Pink Panda, and the reason is pretty obvious. The short ribs were perfectly fried, with a crisp exterior and a tender inside. Swimming in spiced coconut sauce and a coating of delicious spices, their rendition of the beef rendang was so mouthwatering that we had to order two extra cups of jasmine rice (PhP 50) to maximize our enjoyment of the meal. Crunchy and fragrant, it’s a fiery fare that’s like an explosion of great flavors. Totally addictive.

    Finally, we had Char Kway Teow (PhP 285), a popular dish in Malaysia, Singapore, Brunei and Indonesia. It’s a rich dish emboldened by chicken, Chinese sausage, hearty hofan, egg noodles, chili, and sweet soy, with a scattering of bean sprouts to add crunch. If you’re trying char kway teow for the first time, go for the gusto!

    What started as a wine retail store a decade ago is now a restaurant. The Wine Club in Aguirre, Legazpi Street is deep in the center of corporate midtown in Makati, located on the ground floor of a really nice condo. It isn’t actually a “wine club” like the name literally entails; there’s no membership or contract with a locked-in period for subscription. Rather, The Wine Club is a wine lounge where you can have a memorable night out. At the same time, it’s a distributor that offers a wide range of collectible Napa Valley and Sonoma wines to many distinguished hotels and restaurant chains nationwide. Their food menu is not extensive but quality of dishes is pretty solid.

    Review of The Wine Club (Legaspi Village, Makati City)

    Ambiance:

    Featuring a minimal design, The Wine Club has a rustic Italian ambiance. It’s upscale without being stuffy, and it feels celebratory almost any day of the week. Surrounding the modest bar and dining area are various wines on multi-level shelves. Heavy wooden bench tables set against contemporary bar stools create an intimate feel where guests can enjoy their wines at their own pace. Overall, the setting is cozy and the place feels relaxing. It’s an ideal spot for romantic dates, business meetings, power lunches, after-work dinners, and canapé evenings.

    Service:

    To maintain a good standard of service and professionalism, it’s always a plus when service attendants present themselves with a working knowledge about the wines’ vintage, appellation, varietal, and growing region and can answer succinctly when asked. They do at The Wine Club. The staff were conversational and were able to provide excellent recommendations with a good cadence of delivery. They were attentive and friendly without being overbearing.  Dishes were served in a coordinated, smooth, and timely manner.

    Food:

    Topped with pepperoni, Italian sausage, and minced beef, the flatbread (PhP 500) comprised of a good balance of salt, spice, and a little spike of acidity. Mildly bouncy, the pepperoni had a meaty chew and the textural differences with the rest of the components were satisfactory. The crust was amply topped with cheese that added salt and a more depth of flavor to the pie.

    Fresh Basil and Pistachio Nut Pesto Pasta (PhP 490) was rich, appetizing, and deeply flavorful. The pistachio nut mixture was finely granular yet still contributing to its nutty, herbaceous, and lemony profile. Adding cheese would certainly make a savory topping.

    Presented with a deep, sweet, crisply charred crust, Grilled Tiger Prawn Sautee (PhP 590) was a hit. The shrimps were juicy and tender with a crunchy pop, and the layered flavors wonderfully burst with a decisive snap in our mouth.

    Cabernet Braised Kitayama Wagyu Shank (PhP 880) hit all the beefiness and represented a perfect bite of food. We’re happy that it didn’t fall short of our expectation. The beef shanks were luxuriantly rich, moist, and juicy with intramuscular fat.

    For our wine fix, we chose Long Barn Chardonnay 2014 (PhP 250/glass) and Bogle Merlot 2014 (PhP 280/glass) to pair with meat, seafood, pizza, and pasta. Long Barn Chardonnay 2014 is citrus, well-balanced, and almost full in the mouth. The palate is coated with notes along with hints of apricot, apple, balanced aromas of pear and vanilla, and an oak taste on the finish. On the other hand, Bogle Merlot 2014 tasted fresh with plum and fruity flavors with a touch of earth. Texture was smooth and lightly tannic. Overall, this medium-bodied red wine is great for sipping with food.

    Price for Value:

    The Wine Club’s impressive and varied new-world wine selection, user-friendly menus, and the trained staff are the top reasons why I think this wine lounge/restaurant is a recommended go-to destination for foodie and wine enthusiasts alike. If you want quaffable wine to keep the food as focus, you’re in good hands here. The Wine Club has wines that are made for easy drinking and a delicious modern Italian fare that delivers fair value in price. Its welcoming environment will have you returning time and again.     Fatburger’s first branch in the Philippines is now open in Glorietta 2! What’s behind the excitement? A quick look in this setting would probably lead you to believe this is just another American casual burger joint in the mall, one where you can hang out with friends and enjoy comfort food. However, this restaurant will probably deserve a more serious stamp of approval for burger-lovers as it offers a fun “create-your-own” ordering experience. There’s no shortage of ways of build your meal. You can choose different ingredients and add-ons for the burger. Want bone-in and boneless chicken wings? You decide. Choose the flavor and the heat level, the dips, and so much more.

    My family and I visited Fatburger during its soft launch to taste some of its best-selling dishes and learn what’s it’s like to dine in a restaurant which was founded over 69 years ago. Aside from US and the Philippines, Fatburger is also present in other nations including China, Saudi Arabia, Bahrain, Malaysia, the United Kingdom, Fiji, Indonesia, Iraq, India, the United Arab Emirates, Kuwait, Tunisia, Macau, Pakistan, Oman, Panama, Singapore, Canada, and Qatar.

    Review of Fatburger (Glorietta 2, Makati City)

    Ambiance:

    Creating a modern interior of a restaurant that has been existing for ages doesn’t seem an easy task, especially if it’s one of the most storied ones in history. Fueling in creativity, the designers of Fatburger must have made a good job. The color scheme looks subtle and elegant, with neutral colors for the fixtures, walls, and ceiling and red and yellow on the logo as accents. On the surface, this works to positively ooze charm and character as well. Overall, the vibe is casual and relaxed.

    Fatburger is appointed with decent natural lighting across the dining area, but the fancy spotlights even makes the venue look more stylish and appealing as a post-date place to grab snacks in the heart of Makati City. From the entrance, the order counter is properly positioned upfront so customers would see the menu as they walk in. This is then surrounded with a choice of seating at individual tables or at a trendy communal table that’s perfect for mixing and mingling.

    Service:

    Customer service is pretty straightforward. Check the Fatburger menu, order and pay at the counter, and wait for your orders to be served at your table. Need something? Attendants take and manage requests efficiently to ensure a smooth and pleasant dining experience.

    Food:

    Light and hearty, the Garden Salad (PhP 235) may be the best choice for salad lovers and vegetarians. The greens were remarkably fresh and crisp, and the tomatoes had a refreshing snap and brightness that positively screamed garden. The cheese on top disguises the fact that you’re eating something healthy beneath. Aside from making the taste balance and more coherent, it definitely helps to trick the brain into actually enjoying the salad. 😛

    The Chili Cheese Fries (PhP 165) were soft and addictive. The fries would be boring on their own, but the chili managed to tie everything together, while the cheese added sharpness to contrast the richness of the dish. It’s another lovely appetizer to start to the meal.

    Fatburger serves different kinds of burger sizes, and each size upgrades with a layer of patty: original (1/4 lb), double (1/2 lb), triple (3/4 lb), and quad. Customers who would successfully finish The Quad alone will be awarded with a certificate of acknowledgement with congratulatory greeting from Fatburger on conquering the challenge. For huge fans of burgers, it just feels awesome to be at the top at the food chain! Decadent in the extreme for sure, this isthe burger” you eat before standing in front of a firing squad: a last meal of epic proportions. 😉

    For a regular meal, the Original (1/4 lb) (PhP 195) was enough to keep us satisfied. It’s made with chuck-eye beef patty that’s grilled to perfection. It may not be as intense and tremendous in size as The Quad, but it’s a solid burger that’s spot on tasty and not boring. You can’t go wrong.

    Fatburger’s Chicken Sandwich (1/4 lb) (PhP 195) is available in three preparations: Grilled, Crispy, and Cajun. We tried the Cajun-spiced chicken sandwich and we enjoyed it. The chicken was tender and it had a beautiful blend of salt and spices.

    Moist and juicy, the chicken wings were our mighty favorites. We got Sweet Bourbon Bbq – Boneless Chicken Wings (PhP 185, Small – 5 pieces) and Honey Garlic – Bone-in Chicken Wings (PhP 175, Taster – 4 pieces) in medium hot level served with celery, carrots, and our choice of dressing. Well spiced and both sweet, these flavors are a nice departure from the standard buffalo. My sister liked sweet bourbon bbq more, while my mom and I favored the honey garlic. If you want piping hot, get the Death Valley or Scorchin’ and be mighty brave.


    Kick’N Chicken Wrap (PhP 195) is not a rival of the burger but a great complement for a full meal. It’s made with boneless wings tossed in wing sauce with rice, lettuce, tomato and ranch dressing wrapped in a tortilla. The ingredients were put together firmly and tightly. It’s structured in a way that allows the flavors of each piece to burst in the mouth while still providing spots in the chew for hot juices of chicken to collect, ready to be gushed and dribbled out the moment you bite into it. Eat the chicken wrap right away though or it will end up soggy.

    For drinks, we had Lemonade (PhP 65) and Oreo Cookies and Ice Cream Milkshake (PhP 195) which were served as great accompaniments to food at Fatburger.

    Price for Value:

    Fatburger Philippines ushers in flavor bombs beyond the original beef burger we all know and love. Keep in mind that it’s not about burgers alone. Buffalo wings, fries, and other sandwiches are also available and they are all reasonably priced. There’s also a full bar with beer, cocktails, and wine averaging at PhP 150-PhP 200 a glass. Wait…burger and wine? Why not? We’ll try that next time!

    Review of Le Petit Soufflé (Century City Mall, Poblacion, Makati City)

    In celebration of Father’s Day this year, we had lunch at one of the most talked-about restaurants in Century City Mall when it comes to interior design and creative food. Eating at Le Petit Soufflé is a high-drama opportunity since there’s always a long queue and we don’t get to always see an indoor garden-themed restaurant featuring cozy seats, greenery, and bright lights that are a treat for the eyes. Dining here is worth it for the right occasion and with the right people interested in soufflé and a French-Japanese menu that’s a little different…different good. 😛

    Review of Le Petit Soufflé (Century City Mall, Poblacion, Makati City)

    Ambiance:

    The trendy Le Petit Soufflé has an awesome ambiance complete with beautiful light bulbs, faux trees with rolling pins hanging as decorations, attractive walls, interesting panels, and yellow chairs—all the makings of a superb restaurant interior. It’s definitely a vivid space where every corner is Instagram-worthy. The greens bring a sense of nature inside the restaurant, making customers feel almost a world away from the bustle of the city. Pretty charming! 🙂

    Le Petit Soufflé has a good mix of spacious and intimate with a real casual feel. Instead of dividing the room with walls, it signifies zones through transitions in the table-and-chair setup so it looks organized and warm without being too packed or crowded.

    Service:

    The staff is friendly and knowledgeable about the menu, so take their advice if you’re unsure of what to order. Despite the busyness of the restaurant at lunch hour, service remained efficient and attentive. I thought this is one of the factors that contribute to the success of the restaurant and make every experience positive for diners.

    Food:

    The waitress suggested getting the Japanese Beef Curry Soufflé (PhP 525), and we’re happy she did. It took 15-20 minutes for it to be served but we we’re willing to wait.  The dish consisted of savory cheese soufflé filled with fine strips of US beef short plate and Japanese short grain rice with Japanese curry sauce. It’s nothing like the Japanese curry rice of other more straightforward curry restaurants such as Coco Ichibanya, Curry Bee, or Eri Curry. The taste of curry was subtle and so pleasingly fragrant. Cheese gave it a boost in flavor.

    Another main entree we tried was the Squid Ink Rice (PhP 395) which was made with a combination of fresh seafood, shimeji, mushroom, and scrambled egg on delicious squid ink rice. The soft scrambled egg was so fluffy but firm enough. What I love most about this black rice is its refined iodized flavor. What I hate most, on the flip side, is that there’s no way to enjoy it without black-stained lips. Don’t forget to wipe your mouth with tissue. 😉

    For my dad, the shoyu-based Vegetarian Soba Pasta (PhP 325) had an earthy taste that’s unique, one you won’t get tired of eating. Cooked with shimeji, zucchini, eggplant, and bell pepper, it’s like the Japanese version of spaghetti.

    Chef Miko Aspiras’ signature dessert, the Valrhona Grand Crus (PhP 375), was nothing short of spectacular. Formed with layers of decadent Valrhona chocolate (Araguani 72% flourless cake, Caramelia 36% flourless cake, Dulcey 32% ganache, and Equatoriale 55% ganache), the heavenly blocks of chocolate were served with a vanille creme anglaise sauce.

    Honestly, I didn’t have a slightest clue on what Valrhona chocolates are. I just learned now that Valrhona produces the world’s finest gourmet chocolates. OMG. No wonder why it tasted so good! The chocolate has a bitter base with strong liquorice, raisin and chestnut notes and the use of brown sugar. The texture is like silk for your tongue, as different in texture compared to Hershey’s as fine silk is to a burlap bag for your fingers. Please, try it! 🙂

    Quite a show-stealer as well, the Strawberry Lychee Parfait (PhP 195) had a nice presentation with colorful display of ingredients composed of the highlights: strawberry, lychee, and matcha. This treat is so refreshing and addicting. 🙂 The parfait was made with vanilla and matcha custard base, softee swirl with almond dacquiose, fresh strawberries, strawberry sauce, lychee and matcha jelly, matcha mochi and matcha powder. There’s a lot going on; the key is to get a little bit of everything involved in each bite.

    Price for Value:

    There are days when you just want to have a peaceful time and enjoy unusual and interesting choices of food. Let Le Petit Soufflé be your antidote. Prices may cause pain to the wallet but they offer high value. The menu is simple with a few pages, but the execution of the food is so good that seemingly simple ingredients will wow you in ways you didn’t think they could. We had a great time!

    Usually served in a tiny cup, espresso tastes strong and powerful. The way to prepare this type of coffee is one of the finickiest. Last June 11, 2016, we were invited to the Barista Competition 2016 hosted by Espressamente Illy at Rockwell, Powerplant Mall in Makati City to see how five well-trained coffee baristas from the five branches of Illy in the Philippines make coffee. There’s so many intricate steps to getting it perfectly from preparation to serving. Each one could make or break the shot.

    The parameters a barista might mess with while trying to perfect a cup include coffee-to-water ratio, grind size, brew time, and water temperature, among other things. Adding to the challenge was, of course, the time limit. Every one of the contending baristas had to complete three coffee drinks while telling about the execution in 13 minutes. In this case, “pressure’ is what makes an espresso an espresso, literally and figuratively. No matter what, they have to be consistent; consistency in brewing coffee is the silver bullet in the arsenal of tools needed to improve quality.

    Judges gave scores objectively according to the coffee’s sensory feature and the “science” of making it, while we all stood behind as witnesses as to how precision, hands-on care, and love would sum up in drinks that could be savored like never before.

    After over an hour of action, the judges decided and proclaimed the winner. Ronel America (from the NAIA T1 cafe) received the Illy trophy as reward and also some bragging rights. Congratulations! 🙂

    Illy Coffee

    Well-balanced in its constant combination of sour and bitter, the illy taste has an immediately perceived sweet shade. Illy is well known all over the world  for its unique blend, made of nine precious varieties of Arabica coffee, always the same, cup after cup. Its rich and fascinating body is felt by the palate with a tactile feeling of pure pleasure.     The illy blend is available in three different roasting levels. The medium roasting level has a peculiar soft taste, and is sold  in a package marked in red. For coffee consumers who like a deeper and stronger taste, the same blend of Arabica is available in a stronger roasting level, in a package marked in black.

    The illy blend is available in a decaffeinated version as well, in a package recognizable by its green color.  In order to enhance each profile of its blend, and to let everyone appreciate the shades of its taste, in 2010 illy  has created  the Monoarabica  line,  that  includes  the  varieties  of  Arabica  coffee  that    make  the traditional illy blend.

    At present, Monoarabica offers three coffees with a strong personality, and each of them tells something about its country of origin: Brazil, Guatemala and Ethiopia.  Last but not least, an exceptional coffee comes from El Salvador: idillyum is a rare and precious Arabica Laurina (Bourbon variety), extraordinary and exclusive because it has a  very natural low level of  caffeine and it is available in small quantities, due to  the peculiar weather and growing conditions that it requires.
